Chicken salad with Tangy Lime Dressing is a salad that uses black beans, roasted corn, pieces of tortilla mixed with lime sauce, this is the best chicken salad you should try.

Chicken Salad with Tangy Lime Dressing Recipe

 

This salad is full of southwestern flavors that I like, and guaranteed, you will love this salad. This salad dish starts with black beans, tomatoes, corn, green onions, avocados, and crispy tortilla chunks. For dressings, it's very simple, using fresh and delicious lime dressing.

This is only optional, you can add grated cheese or not, of course this is your taste.

Ingredients

  • 2 skinless boneless chicken breasts season with taco seasoning
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup black beans, rinsed and drained
  • 1 large corn cob, husks and silks removed
  • 2 green onions, white and green parts, sliced
  • 1 avocado, seeded and diced
  • Serve with grated cheese, fresh cilantro, lime wedges, and tortilla strips if desired
FOR THE DRESSING:
  • 2 teaspoons freshly chopped cilantro
  • salt and freshly ground black pepper, to taste
  • 6 tablespoons extra virgin olive oil
  • 4 tablespoons of fresh lime juice
  • 2 teaspoons pure maple syrup

Instructions

  1. Start with seasoning chicken breast with salt and pepper, then sprinkle with homemade taco seasoning, let stand for 1 hour.
  2. Heat the grill using medium heat, cook the chicken for 8 minutes, use a temperature of 165 degrees.
  3. When the chicken is cooking, place the corn on the grill and cook on all sides, turning every 3-4 minutes or until it turns black.
  4. Place lettuce, green onions, cherry tomatoes, black beans, roasted corn, avocado, and cheddar cheese in a large bowl, stirring together and serving on a plate, sprinkled with chunks of chicken and tortillas.
  5. For dressing, put all the salad ingredients in a small jar, cover and shake until blended, drizzle the desired sauce over the salad, stir to coat, serve with a topping.
