I put my chicken cordon blue by just cutting the pocket into the chicken breast, then filling it with cheese rolled in ham. For more details, please see the recipe below.

INGREDIENTS
For the Cordon Bleu:

  • 3 large skinless chicken breast.
  • 6 slices good quality deli ham
  • 6 slices of Swiss cheese
  • 1 cup of Panko bread crumbs
  • 2 tablespoons butter, melted
  • For the Parmesan-Dijon Cream Sauce:
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 teaspoon chicken bouillon base
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Brush a 9x13 inch pan with cooking spray, preheat the oven to 350 degrees.
  2. Place the chopped chicken breast in one layer on a plate, coat each chicken breast with a slice of ham and a slice of Swiss cheese.
  3. Use a bowl, mix bread crumbs and melted butter, sprinkle bread crumbs on top.
  4. Bake the chicken for 30-35 minutes, when the chicken is almost cooked, thaw 2 tablespoons of butter. Stir in flour, stir constantly, cook the flour / butter mixture for 1-2 minutes, slowly pour the milk while beating fast, stir the chicken base and salt with pepper to taste.
  5. Shake the mixture constantly over medium heat until the mixture begins to boil and thicken.
  6. After the sauce has swelled and thickened, remove from the heat and stir the mustard, worcestershire sauce and parmesan cheese.
  7. Stir until the cheese has melted.
  8. If the sauce is too thick, add more milk, if it is too thin, simmer longer.
  9. Serve chicken cordon bleu with warm sauce.
