This Mexican salad is a fantastic dish all summer, you will taste Zesty's lime dressing which is very delicious.

Honestly, I really like boiled corn, but I don't like it if it's a bit messy to eat, so why not turn it into a meal? But I was very bored with desserts, and I wanted something different, namely Salad !.

This pasta salad has all the tastes of Mexican corn, it will not disappoint you, this salad has become one of my favorites because it is very simple and fun, even you don't need to spend a lot of time just to make this salad.

This dish is very multifunctional, you can present this dish as a main dish or side dish, but I prefer to present this dish as a side dish.

Mexican Corn Pasta Salad Recipes


There is one thing that is most popular, the Chipotle lime ranch sauce, I really like that taste, I can't stray too far from the classic Mexican street corn cooking technique, but I always use chipotle chili to make this dish, are you interested and want try this dish? Ingredients

  • 3 cups uncooked penne pasta
  • 4 cobs of corn husks & silk removed
  • Olive oil for corn coating
  • 1 cup Cotija cheese (or use finely grated Parmesan or feta)
  • 1/2 medium red onion chopped
  • 2 tablespoons cilantro chopped
  • Salt & pepper to taste
Dressing:
  • 1/2 cup mayo
  • 1/2 cups sour cream, Greek yogurt, or Mexican crema
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon chipotle chili pepper (or to taste)
  • Juice + zest of 1/2 lime
  • Salt & pepper to taste

Instructions

  1. Boil a large pot of salt water for pasta, then cook al dente according to the instructions.
  2. After that, rinse with water after cooking.
  3. Put oil on a BBQ grill, then heat it.
  4. Lap your corn with olive oil, then bake for 10-12 minutes, then turn it around every few minutes until you get a good charcoal mark, let the corn cool.
  5. Then, prepare the other pasta salad ingredients and add to a large bowl, mix the sauce ingredients together in a small bowl.
  6. Then cut the corn kernels carefully so it's cold enough to handle.
  7. Put the corn in the salad bowl.
  8. Stir until everything is combined, add salt and pepper as needed.
  9. Serve on the table.
