Ingredients

  • 4 chicken breasts (boneless / skinless)
  • 1/2 cup of ketchup
  • 1/4 cup Sriracha Sauce
  • 1/4 cup honey
  • 2 tablespoons of soy sauce use low sodium if you wish
  • 1/2 cup water
  • 3 tbsp cornstarch + 1/4 cup cold water to thicken sauce
  • For Serving:
  • Cooked rice
  • Scallions chopped, to taste

Instructions

  1. Enter the chicken breast in an instant pot, then in a bowl, shake honey, sriracha, sauce, soy sauce and water until smooth.
  2. Then pour the chicken using the sauce.
  3. Cover and adjust the valve, then cook under high pressure for 10 minutes.
  4. After the countdown is complete, release the pressure quickly, this will ensure the chicken is cooked properly.
  5. Remove the chicken and place it in the container.
  6. Press the saute button on the Instant pot, then in a small bowl or measuring cup, then mix in corn flour + 1/4 cup cold water, then add to the instant pot and simmer for a few minutes until the sauce thickens slightly.
  7. Meanwhile, cut the chicken into small pieces.
  8. Put it back in the instant pot when the sauce is thick, then serve it on the rice with leeks.
